Pancakes aren't just for pancake day in my humble opinion. They are an all year winner, so want the world's easiest pancake recipe so can you knock them up on short notice?

Ok, here it is...
2 eggs 1 banana
That is it. No more, no less. Stick to that ratio and you can't go wrong. Even I, possibly one of the most awkward people you will ever meet in a kitchen, can make these pancakes.
Whizz the mixture up in the blender or Nutri-bullet in my case and pour mixture into frying pan with a little coconut oil to avoid sticking. Add whatever extra flavouring you like, I often add cinnamon and/or vanilla. If you wanted a healthy chocolate edge, cacao power would be a great additon.
Not only are they easy but they are healthy. My 4 year old loves them. I make a batch of small ones, layer them up with fruit and Algarve Nectar (in place of honey) and hey presto!
I would like to add that I am not some super strict, obscure ingredient using, health freak. Far from it. It's just that these are a no brainier, no unnecessary added sugar on the scene and I know that he isn't going to go completely bonkers after eating them. They are a great morning pancake. Try adding strawberries or blueberries. No banana needed as that's already in the pancake.
You still get the fun of the pancake and crucially, in my opinion, you can eat more of them because they are basically fruit.
Failing that, go with Jam or honey or good old fashioned lemon and sugar, even Nutella or of course, cream and maple syrup!
