Organix top tip: These delicious fritters are a perfect finger food for babies, but will be loved by all the family. The feta and mint give a fresh summery taste and are great for a picnic. Super easy to make and can be made in bulk for a quick supper anytime.

Makes approx 15-20 fritters Suitable for freezing Suitable from 10 months
Fritters • 3 courgettes • large handful fresh mint • 2 spring onions • 1 large clove garlic • 100g feta • 50g pecorino / parmesan • 1 egg • 70g flour (gluten free optional)
Tzatziki • 200g greek yoghurt • juice of ½ lemon • 1/2 garlic clove crushed • 10cm cucumber (peeled and very finely chopped) • 1 handful fresh mint
Mix all tzatziki ingredients together and allow to rest for at least an hour ideally. Go easy on the garlic for younger babies. (They may prefer just a plain yoghurt dip)
Grate the courgettes and place in a sieve over a bowl. Use the heel of your hand to press out excess moisture. You should find that you get a bowl full of green liquid released from the courgettes! Pick up the courgette in handfuls and give it an extra squeeze out, before placing into a large bowl. (You’re aiming to get rid of all excess moisture).
Finely chop spring onion and mint, crush garlic, crumble feta, and grate pecorino and add all to the courgette, stirring thoroughly. Then add egg and flour and mix though to form batter.
- Heat a drizzle of oil in a large frying pan over medium heat. Add a tbsp. of batter to the pan to form a small round fritter. You should be able to cook 4 – 6 fritters at a time, depending on the size of your pan. Cook for 4-5 minutes each side, until golden.
Serving suggestion Serve warm or cold with tzatziki or plain yoghurt dip. Add a few leaves or some steamed seasonal greens for a full meal.
